How to Make St. Patrick’s Day “4 Leaf Clover” Eggs

Do you need a fun, EASY and healthy breakfast for your family on St. Patrick’s Day? Look no further! I’ve got the recipe for you.

Let it be known that I’m also totally on board with just pouring your family a bowl of Lucky Charms in a pinch. However, these days we’re trying to stay away from a lot of extra sugar. Plus, the girls are realizing it’s almost spring, so they’re little laying machines!

We have an abundance of eggs, so we’ll be having fried eggs, scrambled eggs, poached eggs, egg salad, deviled eggs and more I’m sure! But, for today, we tried these “4 Leaf Clover” eggs and they were delish!

Ingredients:

  • Green Peppers – I chose the one with the 4 “bumps” over 3 so they look like 4 leaf clovers!

  • Eggs

  • Everything but the Bagel Seasoning

Directions:

Heat your cast iron skillet (or pan) on medium heat. While pan is heating, wash and slice your green peppers. Place into pan and cook each side for about a minute. Crack your egg directly into the pepper. Allow egg to cook thoroughly and sprinkle with seasoning. I covered the peppers for about a minute to allow the egg to cook more evenly. That’s it!
