New Summer Garden Salad Recipe for Your Labor Day Picnic!

The summer is coming to a close and we’re getting geared back up for schedules, school, football and all things pumpkin spice around here. However, summer is still holding on and in my mind isn’t over until after Labor Day! If you’ve been invited to a picnic and need a quick idea for a dish to pass…look no further than your garden! I make this salad weekly here because it’s healthy, delicious and super easy! And, I have the ingredients on hand because I plant all of this in our garden, other than the dressing of course!

Ingredients:

  • Cucumbers

  • Tomatoes

  • Green onions

  • Bell pepper (I like the yellow for the extra pop of color!)

  • Newman’s Own Olive Oil and Vinegar Dressing (of course you can make your own if you’d like)

  • Salt

  • Pepper

**Amounts will depend on the size of salad you need to bring

Directions:

Wash all produce and pat dry. Peel and slice cucumbers. Dice the tomatoes and pepper. Chop up the green onion. I only use the greens, but if you want a sharper flavor, go ahead and add the whites. Gently mix together. Slowly drizzle and stir the dressing until it looks lightly coated. Salt and pepper to taste! It literally takes me 5 minutes to put this together! No stress in this kitchen! Occasionally, I’ll add in some Feta cheese if I have some on hand. Otherwise, this salad is as fresh and light as they come! Enjoy!
