I’m a creature of habit, I love traditions, and Christmas time is no different. Today, I’m going to share with you one of our family’s favorite breakfast dishes. My mom started making this for us over the 4th of July every year. So, I’ve moved the tradition for our family and make this every single Christmas morning while we open our stockings. It’s simple and easy and only requires a few ingredients. You do need to prepare it the day before so it can chill overnight, but other than that, there’s not much guesswork!
1 loaf cinnamon bread (regular bread is fine too, but just not as good!)
2 ¼ C. milk
1 tsp vanilla
Topping: ½ C flour, ⅓ C packed brown sugar, 1 tsp cinnamon, ¼ C butter (I will sometimes double this because my family loves the streusel part!)
1 Cup Blueberries (or more if you love blueberries!)
Blueberry or maple syrup
Layer bread slices in a lightly greased 9×13 pan. Combine eggs, sugar, vanilla and milk in a bowl. Whisk until smooth. Pour egg mixture over bread layers making sure slices are well coated. Cover and chill for 8-10 hours.
Next Morning: Preheat oven to 375 degrees. Sprinkle blueberries evenly over the soaked bread. Combine flour, brown sugar and cinnamon in a small bowl. Cut in the butter until particles are the size of small peas. Spread the flour mixture over the blueberries. Bake uncovered for about 40 minutes or until golden brown and bubbly. Remove from the oven and garnish with fresh blueberries. Serve with blueberry syrup and enjoy!
