Valentine’s Omelet Muffins

It’s February! This is going to annoy some of you I’m sure, but I love the month of February. I’m not sure if it’s because we know that spring is getting close, or because I truly enjoy the Valentine’s holiday. I have always loved Valentine’s day (insert some of your eyerolls here…haha) and try to make this holiday a little extra special. I always feel like it’s fun to celebrate those we love!

This year, I decided to whip up some heart-shaped muffins. I ordered a silicone pan here, but you can probably get one locally this time of year! Our daughter doesn’t care for eggs, so I also made some banana muffins for her. I could barely get these on the platter to take the picture before they were wiped out! The family gives them 2 thumbs up!

Valentine Omelet Muffins

  • 12 Eggs

  • ¼ Cup Milk

  • 1 ½ Cups Shredded Cheese

  • 1 Can Rotel – gives the egg muffins a little extra kick but isn’t overly spicy

  • ½ Cup Bacon Pieces

  • Salt and Pepper to Taste

Instructions:

Preheat oven to 350 degrees. Spray your heart-shaped pan. Mix all ingredients well and pour into the heart cups. Bake for 17-20 minutes until a toothpick comes out clean. Enjoy!
