Last year we did a “chopped challenge” with our Thanksgiving leftovers. If you haven’t tried this yet, check it out and give it a shot! It’s a fun activity with family and friends and takes care of all of those leftovers.
If that’s not your thing, no worries! I’ve got you covered! We love our waffles around here, but I’ve only ever made the sweet, breakfast ones. This year, I decided to whip up some savory ones. Grab those leftovers out of the fridge and let’s get going!
My family loved these waffles so much, I had a hard time guarding enough of them to keep for this picture! They devoured them and have been asking for more. I will definitely be doing this with our leftovers more. Also, I made pretty basic ones for the purpose of this blog. Remember my promise to you…“less is more” in my kitchen! Long detailed recipes are too much for me, so I like to keep it simple. With that said, you could add in chopped turkey, cranberries and maybe some squash as well! Go ahead and experiment and let me know how it goes!
Thanksgiving Leftover Waffles
Ingredients:0
· 3 Cups of Leftover Stuffing
· 2 Eggs
· 3 Tbsp Parmesan cheese
***If you add other items such as turkey, potatoes, or squash, you may need to add another egg or a splash of chicken stock so it doesn’t get too dry.
Directions:
Preheat waffle iron. I have a mini one that works well, but bigger ones would be yummy too!
Put all ingredients into a bowl and mix well.
Spray the waffle iron and spoon the mixture into the iron. For my mini waffles, it took about 3-5 minutes per waffle, but every iron will vary.
Top with leftover gravy, slather cranberry sauce, or simply eat plain! These are a fun treat and will definitely be a regular around our house.
