Annie’s Easy and Delicious Hollandaise Sauce

I love going to restaurants and being so excited to see any dish that includes hollandaise! I remember thinking that it has to be such an art to mix up a beautiful, velvety sauce like that. While I’d love for you to all think I’m an excellent and highly skilled chef (ahem…I’m not), I’m convinced anyone can whip up this creamy goodness!

Ingredients

  • 4 egg yolks

  • 1 stick butter melted and hot

  • 3 tsp lemon juice

  • Pinch of salt

  • Dash of pepper or cayenne pepper

  • 1 tsp dijon (optional)

 

Instructions:

  1. Combine and mixe (or use a hand mixer) the egg yolks, lemon juice, salt and pepper.

  2. Very slowly mix the melted butter into the egg yolk mixture. Stirring the butter in slowly will prevent the hot butter from over cooking the egg yolks. So, this is probably the most important part!

  3. Serve immediately over your eggs, protein or favorite vegetable. Enjoy!
