4 Ingredient Egg Cups

Happy New Year! I know that all of us are looking forward to 2021. The new year brings a fresh feeling of new beginnings. Many of us realize we ate too many of those delicious cut-out cookies during the Christmas season, and are in need of a bit of an overhaul in our healthy eating.

 

In our home, we are going to focus more on whole foods and less sugar! So, I whipped up these 4 ingredient egg cups in about 25 minutes. That’s including the bake time! Enjoy!

Ingredients:

  • Sliced ham

  • Shredded cheese

  • 12 eggs

  • Everything But the Bagel seasoning

Directions:

Preheat your oven to 350 degrees. Lightly spray or grease your muffin cups. Gently lay 1 piece of ham into each cup. We choose nitrate free meats when we’re choosing lunch meats. I then added a pinch of shredded cheese on top of the ham. Then, simply crack an egg into each cup. Sprinkle with seasoning. Bake for 20 minutes for a softer yolk or 22 minutes for a harder yolk. Enjoy!

 

Variations:

You could scramble your eggs and add in your favorite veggies, crumbled bacon, or seasoning. Use a different type of meat or cheese. Top with salsa or hot sauce.

I’m not a gourmet chef, but when I can make healthy food for my family that even looks nice? Bonus! And the only dish I needed to wash was my muffin tin!

 

I doubt we will have any leftovers, but if we do, the girls will sure enjoy them as well. They’d be a great source of extra protein for the ladies who are currently molting. I will definitely be making these again very soon!
