Annie’s 2-Ingredient Keto Pancakes

Are you a pancake lover, but the pancakes don’t love you? I love pancakes, but I hardly ever eat them. First of all, they make me feel so full and let’s be honest, the nutrition facts aren’t in our favor either. Holy calories!

However, I’m a firm believer in “everything in moderation,” so if pancakes are your thing, go for it every once in a while! But, if you’re looking for a lower sugar/carb alternative, you’ve come to the right place today.

I’ve had other keto pancakes before and they were just okay. But, after I tried this new recipe this morning, I’m sold! They were delicious! Even better, it was just 2 ingredients! I just had a couple of them but I didn’t have that overly full feeling like I do with regular pancakes. Also, I felt pretty good knowing I didn’t smash my daily calorie count in one meal with breakfast.

So, without further ado, here’s my recipe for 2-ingredient keto pancakes!

2-Ingredient Keto Pancakes

4 Eggs

4 oz softened Cream Cheese

Blend the eggs and cream cheese together well. Cook on medium/high heat for 1-2 minutes each side. The consistency is a bit runnier than normal pancake batter, but I didn’t feel it was hard to work with. That’s it! Seriously, I’m not kidding. I wanted to eat the whole batch! They were so delicious! Next time I may add in a sprinkle of cinnamon, but other than that, I wouldn’t change a thing! Enjoy!
