Don’t let the word frittata scare you! It’s a fancy word for eggs, milk, cheese, meat and veggies. And honestly? Your options are endless. I just whipped one up quickly, and it turned out great! If you’re watching your carbs, this is an excellent dish. If you’re trying to incorporate more protein and veggies, this is a great way to do it. You can tailor it to whatever your family likes. The best part? You only need one pan if you have a cast iron pan.
Ingredients:

1 lb. Breakfast Sausage (Cooked and Crumbled)

8-10 Eggs

⅔ C Milk

1 C Shredded Cheese
-
1 Clove Garlic
-
¼ Red Onion
-
2 Cups Fresh Spinach

3 Mini Peppers Diced
-
Salt and Pepper to Taste
Directions:
Cook your sausage and crumble over medium heat. Remove from pan and allow to drain.
In the same pan, place the garlic, onion and peppers. Cook for 3-4 minutes until tender. Add spinach and cook down until wilted.
While your veggies are cooking, add 8-10 eggs and ⅔ C milk to a mixing bowl. Beat well. Add ¾ C shredded cheese and salt and pepper.
Add sausage back into your cast iron pan with the veggies. Pour the egg mixture over the meat and veggies. Sprinkle with the remaining shredded cheese.
Allow the frittata to cook on the stovetop until the edges are set. Then, place in the oven at 350 degrees for 20-22 minutes.
That’s it! A super delicious, healthy and relatively easy dish to make. And you don’t have to use veggies or meat like I did. A lot of times, I’ll just throw bacon pieces in for the meat to save time. Some people will add tomatoes, feta cheese or other exciting things. We love to serve ours with a side of fruit and a great big cup of coffee. However, tonight, we will be eating this for supper! The options are endless with this winner!
